Mexican Street Food at Home (Salmon tacos, elote, and cilantro rice)

Mexican food is definitely on top of my list of a favorite food. You are in for a treat today as I'll be sharing not 1, not 2 but 3 easy recipes for the whole family to enjoy!

Elote or Mexican street corn is so easy to make, and I promise you will love this! Unfortunately for me, corn isn't in season at this moment (Feb). The sprouts closest to me did not sell them, so I opted to use canned corn (I know elote means corn cob), but I promise you this tastes pretty darn delicious!


Ingredients:

-1 can of whole kernel corn (completely drained)

-1.5 oz of mayo

-1 tsp lime juice

-1 to 2 oz finely grated Cotija cheese

-a couple of dashes of creole seasoning

-pinch of salt

-pinch of cayenne for heat


What I did:

FYI: Elote can be enjoyed hot or cold, all up to you! Either way, you'll enjoy it!


-On medium heat, place a cast-iron skillet (if you don't have one, a regular pan will do just fine) and let it warm up a bit.

-Add the drained corn and heat through for about 2 minutes or so

-This will char the corn

-Turn the heat off

-Mix in mayo, lime juice, 1 oz of cotija cheese, creole seasoning, cayenne (optional), and salt.

-Mix all the ingredients, serve the rest of the cotija cheese on top. And enjoy!


CILANTRO RICE:

-1 cup white rice

-2 cups vegetable stock

-1 tsp salt

-1 to 2 TBSP olive oil

-1 tsp lime zest

-1.5 to 2 whole lime juice

-1/4 to 1/2 cup of chopped cilantro

-pinch of salt

What I did:

-Cook rice with vegetable stock (set aside)


In a blender:

-blend chopped cilantro, olive oil, and lime juice


-When rice cooked, add lime zest and blended cilantro mixture into the rice.

-Taste rice (add more lime or cilantro to your liking. Add a pinch of salt for taste).


SALMON:

-1 lb of salmon

-1/2 cup of teriyaki sauce

What I did:

-Cut salmon into cubes

-Season with salt and pepper

-Spray pan with olive oil, cook the cubed salmon in the pan (1 minute each side)

-Add the teriyaki sauce (make sure to coat the salmon with the sauce thoroughly)

-Turn heat to simmer

-Cover pan with a lid, cook and let simmer for about 5-7 minutes
