Lemon bars (Pioneer Woman Recipe)

I do not bake at all for those who know me, but with this recipe, I was able to make something amazing for my family to enjoy. This recipe is super simple to make and the ingredients you'll most likely already have in your pantry.

I'm a spring baby, and I love anything lemon flavored desserts (one of my obsession). I'm not much of a cake person, but I love love love different kinds of desserts bars, from lemon bars to pumpkin bars and even sweet potato bars (I'll be making this in fall that's for sure).

I love watching the food network, and one of my favorite show to watch is The Pioneer Woman, Rae Drummond is my role model! She is a super mom who creates delicious food for her family, and I hope to meet her someday and visit her beautiful ranch, where all the magic happens.

Anyways, what was I talking about? Oh, yes back to the recipe

This recipe is delicious, but it is not overly sweet, which my little one liked. The crust was buttery, soft, and tasty!

What will I need for the crust?

  • 2 sticks (1 cup) of salted butter (cut into cubes)

  • 1 1/2 cups of all-purpose flour

  • 1/2 cup granulated sugar (I didn't have this on hand, so I used honey granules)

  • 1/4 tsp kosher salt

..And for the filling?

  • 2 cups granulated sugar (I used honey granules)

  • 1/2 cup all-purpose flour

  • 6 large eggs

  • 5 lemons (zest and juice)

  • powdered sugar (for sifting)

Step-by-step instructions:

  • Preheat the oven to 350F

  • Combine all the crust ingredients into a bowl (using a pastry blender to cut and mix the butter with the flour and sugar)

  • Grease a 9x13 inch pan with butter and line the pan with foil or parchment paper

  • Press the crust mixture into the pan and bake until golden brown for about 20 minutes.


  • Prepare the filling, whisk together the granulated sugar + flour + eggs and then add the zest and lemon juice (mix well).


  • After baking the crust, pour the filling over the crust and bake until set for about 20 minutes.

  • After baking, allow cooling in the fridge for about 2 hours

  • Sift powdered sugar over the top before cutting the lemon bars into squares.

!!!! Clean the knife in between cutting the bars.
