Fourth of July's Firecracker Grilled Shrimp



Just like that, it's July 1st. Are you somebody who meal plans ahead of time, or you just go with the flow? I honestly did not buy anything to grill for this weekend, but thankfully I have some frozen shrimp from our last Costco run. This firecracker shrimp of mine is such a great appetizer or main course. I've made this numerous times, and it's the same outcome every time; it is such a hit! This recipe is not only delicious, but it is super simple to prepare. The weather in Lathrop changes throughout the week, I kid you not. It was just 90+ degrees Fahrenheit yesterday, and it's 75F today. Last weekend it was 105F, and this weekend is about to be 95F. Regardless, summer is here, and if you are like me, you and the heat do not get along. I'm so happy we have an indoor grill. I will be making this again this weekend (indoors) and have the A/C on full blast while cooking for our guests. You do not need an expensive indoor grill. Ours was a gift, but you can find smokeless indoor grills for cheap on Amazon.

Independence Day Menu:

  • Grilled shrimp

  • Grilled Pita Bread (store-bought)

  • Sun-dried tomato bruschetta (store-bought)

  • Caesar salad with homemade low-fat, high protein dressing.

Grilled Shrimp

  • Frozen (fully thawed, seasoned with salt and pepper)

  • Marinade: 2 Tbsp Dijon mustard + 2 Tbsp maple syrup + 1 Tbsp Sriracha (small amount for the kids to enjoy).

  • Grill 3-5 min each side


Grilled Pita

  • Pita bread

  • Olive oil + garlic salt (brushed on each side of the pita for flavoring)

  • Place it on the grill (1-2 min each side)

  • Cut in 4's or 8's (triangle pieces)

  • Serve with sun-dried tomato


Homemade low-fat, high protein salad dressing

  • Plain Greek yogurt

  • Dijon mustard

  • Onion powder

  • Garlic powder

  • Salt & pepper for taste
