Crispy Popcorn Tofu (vegan friendly)
You guys, crispy popcorn tofu!!! As crazy as that sounds, oh my gosh!! I mean, I didn't hate tofu, but I didn't cook much with it because of the mushy state. I'm a crunch girl, and before becoming a pescatarian, I was a chicken nuggets girl, popcorn chicken, crispy chicken sandwich, you name it, I loved it! Well, with this dish, I can confidently say that I'm now a fan of tofu. Seriously share this recipe with your friends who dislike tofu, and do not tell them what it is 'til they take the first bite. My big kid is super picky, and he even loved this dish! No kidding. I served it on top of a waffle, drizzled with maple syrup! I mean, yum, right? Tofu is high in protein and contains all of the essential amino acids our body needs. This is why tofu is a staple in vegan cooking, and it's a great "meaty" substitute.
3.4 oz (100 g) serving of tofu contains:
Proteins: 8 grams
Carbohydrates: 2 grams
Fat: 4 grams
Tofu also offers fiber, manganese, calcium, copper, and magnesium.
Anyways, let's go back to why you were here in the first place. Here are the ingredients I used for this recipe.
-1 pack extra firm tofu
-1 cup vegetable broth
-1/2 cup plant-based egg (Just brand)
-2 cups Pamela's almond flour (divided)
-1/2 cup nutritional yeast
-Salt and pepper for taste
-Olive oil or vegetable oil for frying
What I did:
1- Wrap the tofu in a clean towel and press it down gently with a weight (an important step to remove excess fluid from tofu)
FYI: if tofu still looks crumbly, keep pushing to make the tofu dry without any excess liquid.
2-Tear pieces of tofu to make that popcorn "chicken" look.
3-Place the tofu in a deep bowl
4- Pour the vegetable broth on top of the tofu pieces (let it sit for a while, rehydrate the tofu, and have that not dry taste after cooking).
5-Assembly your breading station:
-Plant-based egg in a bowl
-1 cup of almond flour (in another bowl)
-1 cup almond flour and nutritional yeast in another bowl, seasoned with salt and pepper.
6-Dip the tofu piece into the plant-based egg
7-Coat tofu dipped in egg with almond flour
8-Dip again in plant-based egg
9-Then finally dip into the almond flour and nutritional yeast mixture
10-Then fry until golden brown.
11- Let rest on a wire rack or plate with a paper towel to let excess oil drip.
